  • Using them in 7 days? Pantry is fine. Dark, cool, dry spot. A brown paper bag works magic.
  • Need 3 weeks? Fridge them, but keep them in a paper bag inside the crisper. The bag absorbs moisture. No plastic bags—plastic is a potato’s personal sauna.
  • Slice them first? Once cut, they are obligated for the fridge. Soak them in water to keep them from turning brown. It’s a legit trick.

Here’s the ironic twist: I now fridge my potatoes on purpose in the summer. My kitchen gets hot. A hot potato sprouts. A cold potato sleeps. I’d rather have a slightly sweet potato than a hairy alien one.
