Place the grapefruit on its side on your board. Slice off the very top and very bottom—just enough to see the flesh. You want a flat, stable base. If it wobbles, you’re doing it wrong.
This feels weird at first, like you’re decapitating a fruit. But it’s essential. It gives you a clean view of the pith-to-flesh ratio, which is your battle map.
Step 2: The Great Peeling
Now, stand the grapefruit on one of its flat ends. Cut downwards, following the curve of the fruit, to remove the peel and pith in strips. Go deep enough to see the naked flesh, but not so deep you waste half the fruit.
