The pot and the water ratio.
Grab a medium saucepan with a tight-fitting lid. No lid? Use a plate. We’re improvisers here. Put your rinsed rice into the pot. Now, add 1.5 cups of water. Yes, 1.5. Not 2. Not 1.75. The universe runs on this ratio. Too much water gives you porridge. Too little gives you crunchy betrayal.
