Here is the golden rule you can tattoo on your brain. If your buttercream has eggs or cream cheese, it goes in the fridge. Period.
If it’s just butter, sugar, and vanilla? You’re fine on the counter for a day. Maybe two. Your kitchen is not a biohazard zone.
But if you live in a hot, humid swamp (hello, summer in Florida), refrigerate it anyway. Butter melts. Then your cake slides off the plate. Tragedy.
The Comeback Trick
So you refrigerated your masterpiece. Now it’s a cold, hard blob. Calm down. There is a rescue plan.
Take it out of the fridge at least one hour before serving. Two hours is even better. Let it slowly wake up like a grumpy teenager.
Pro tip: Do not microwave it. Microwave buttercream turns into a greasy puddle of sadness. Just let time do its magic.
