Picture this: You’re making a classic whipped cream for a strawberry shortcake. You use the heavy cream, and it whips up beautifully—light, fluffy, perfect. Then your friend tries using half & half or milk.
Yikes. That won’t work. But if you swap heavy cream for heavy whipping cream? Piece of cake. They both whip into stiff peaks because they have plenty of fat.
The only real warning is if you’re using light cream or whipping cream (not “heavy”). Those have about 30% fat and will let you down if you try to whip them stiff.
