Freezer burn looks scary—those white, icy patches make your turkey look frostbitten. But it’s not toxic. It’s just dehydrated meat that tastes a little off. You can trim it away or hide it with a lot of sauce.
To avoid freezer burn, remember the mantra: “Less air, more care.” Shove that turkey into its icy cocoon with as little oxygen as possible. And if you fail, just turn the sad bits into stock. Stock doesn’t judge.
Also, never stack hot bags on top of each other in the freezer. They’ll freeze into one giant block of turkey iceberg. You’ll need a chisel to separate them. Ask me how I know.
