I know, I know. You want to cut into that glorious thing while it’s still steaming. Don’t do it. If you slice into a hot pie, the filling will run out like a sloppy waterfall, and you’ll be eating apple-jelly soup on a plate.
Let it cool on a wire rack for at least 2 hours. I said at least. Go read a book, call your mom, or do a happy dance while you wait. The filling needs to set, and the crust needs to crisp up. Your patience will be rewarded.
